Happy New Year!


I'm so not good at making, and keeping resolutions!  This year I'm taking more of a to do list approach.  I seriously cannot believe 2010 is over.  Where did those 12 months go? My boys are 1 year older, and it is flying by.  Everyone always says that's what happens and now I know it's true.  In a quick post tonight, I just wanted to jot some things down for the new year...here's my top 10 in my mind right now:

1. Read my Bible more
2. be still a little more...listen
3. scrapbook
4. be better and what I do, no matter what that may be...work, house-keeping
5. continue to work on living healthy (www.plexusslim.com/95526)
6. go to 2 concerts this year
7. attend 2 conferences this year (for women, marriage, something to help me grow)
8. get involved a little more...church, neighborhood, community
9. work out...get back into spinning and swimming
10. be the best mom and wife i can be in 2011

Oreo Truffles



A recipe, from me?? I know, someone take my temperature!  Actually, it is something even I can make and always a huge hit at christmas time!  Orea truffles are so easy and taste amazing.  I have to thank an old friend in Kansas for the idea and how to! Thanks Jen!!  Anyway, here goes:

You will need:
1. 1 package Oreos
2. 1, 8oz Phileadelphia Cream Cheese
3. 1 package Almond Bark (found at Wal Mart)













First, crush the entire package of Oreos either in mixer or my way (in a ziplock freezer bag with a hammer!), they need to be pretty finely crushed.

then mix in a room temp, soft package cream cheese.  I just start mixing it in with my hands and keep kneeding until it is all mixed in.  It will seem like you don't have enough cream cheese...just keep mixing!

set the bowl in the fridge and chill the mixture.

after the mixture has chilled, take the bowl out.  prepare a cookie sheet with wax paper.  then roll the mixture into bite sized balls and set on wax paper.

then it's time for the magic...in a large glass bowl heat the almond bark chocolate, better to do in 30 sec incriments and stir...usually only takes 90 seconds.


Using a fork, dip the Oreo balls into the chocolate, strain with fork and set back on wax paper! repeat until all truffles are covered!!

 ENJOY!!!!

I drizzled some white chocolate almond bark over the truffles to make them a little fancier for gifts! Wish I had taken a picture of the plate with cellophane and bows! So cute! And YUMMY!!

New Year's Resolution time...

I've been doing a lot of thinking lately.  New Year's resolutions should mean something.  They should be something that really does affect life for the better.  I've made a lot of resolutions in the past that haven't "stuck" and I'm sure there will be more failures in the future.  But for now, there are a few things that I really want to focus on.  I have some "nudges from heaven" in my heart that make me feel like this is going to be a year of growth for me.  At least I can hope and strive for that.  It is always good to improve, move forward, get better, seek more, stretch a little bit, and in all of that, find a better self.  I am hoping to find a giving, sharing, patient, kind, understanding, nurturing, and strong person in myself in the year to come.  And I am not planning on doing it alone.  Nope.  I'm smarter than that.  I know that there is a God who loves me deeply and wants the best for me.  He is my hope, my guide, my peace, and my direction in the year to come.  I find such an amazing calm when I read some of my favorite Bible verses.  If only I read more.  Paused more.  Reflected more.  I plan to...in 2011.

christmas vacation plans...

So, what do you all do when school is out and the kids are wild?? Today we cleaned and unpacked! The boys didn't like that very much.  By 3 in the afternoon, they were fighting and not playing well and I didn't have anything planned.  Tomorrow we are going to go see yogi bear and then wednesday we have invited jackson's first grade class over for a christmas party (he started planning it when he was in the hospital!) We invited all 25 kids and have no idea how many will actually come.  A little nervous about that! thursday is a trip to new orleans for dermatology appointments for both boys and i'm hoping my hubby will be off and we can go to the mall to see santa! maybe that would be a crazy idea 2 days before Christmas!?  Then all next week, NO PLANS! AAAHHHH.  Any good ideas to keep us all from going crazy and having a little fun while on break from school?

over the river and throught the woods...

...to granny's house we went! This weekend was a quick Christmas trip to visit my in-laws 5 hours north of us.  We always do Christmas with them the weekend before Christmas and it works well for all involved.  The boys had a blast playing with their cousins (and a new one this year too!) and are awe struck that grandaddy is on such good terms with Santa, that Santa manages to find us at granny's house every year!! :)

shopping, shopping. and more shopping...

6 hours to be exact! Why do I do this to myself every year? I wait until the middle of December and then stress out! Although today wasn't that bad.  I was very productive and got a lot done (even though I couldn't find my 3 page list of who to buy for and what they wanted!)  Target was sold out of the "santa" gift I was going to get but other than that, got about 75% done! More to do tomorrow and then wrapping and cleaning and traveling and Christmas cards and parties...wow.  Have a great week everyone!
